Super Bowl, Super Snacks

Food is an important part of our lives every day, but on Super Bowl Sunday, food gets an even bigger spotlight. You’ll probably be invited to a Super Bowl party – and whether you go for the football or the party, you are going to be around every kind of snack food under the sun for hours.

If you want to leave the party a winner — both for your health and your waistline — you need a game plan. In addition to mindful snacking, I highly suggest bringing snacks (for yourself and to share!) to guarantee highly nutritious foods that will fuel your energy and not your waistline!

Here are two of my favorite superfood snack foods you can take with you that you’ll feel great about eating. First up? Kale chips! If you’ve heard of these, I’m stoked. Kale is a total superfood from start to finish. Packed full of antioxidants and vitamins A, B6, C, K, this superfood is a cancer-fighter and heart health champion. What’s not to love about a superfood that you can make into a chip? Better yet, these are so easy to make!

KALE CHIPS

(Serves 2)

KITCHEN UTENSILS

One cookie sheet or baking sheet to place your “chips” on.

Cutting board

Strainer

One large bowl

WHOLESOME INGREDIENTS

1 bunch kale, preferably dino kale with the flat leaves

1 Tsp. Braggs Liquid Aminos* (if you don’t have Braggs, Himalayan sea salt is great as well!)

2 Tbsp. Coconut Oil – Melted

Optional: 2 cloves garlic

STEPS TO SOMETHING DELICIOUS

You can use your oven or a dehydrator to make these chips.

  1. If using an oven, preheat to 325 degrees.
  2. Wash the kale in your strainer and dry thoroughly. Pat dry with paper towels or a cloth. Tear the kale leaves off the stem and rip into chip-sized portions.
  3. In a bowl, drizzle the kale “chips” with melted coconut oil and Braggs Liquid Aminos (if you don’t have Braggs, feel free to use sea salt or soy sauce of choice) and massage into the kale pieces with your hands.
  4. Optional: mince 2 garlic cloves and add to oil mixture to drizzle over the kale.
  5. Directions for oven: Lay kale chips out in an even layer on a baking sheet lined with parchment paper to prevent sticking. Bake for 20 minutes. Midway through baking (after 10 min), toss and turn the chips using tongs or a spatula to help the chips cook evenly. The chips are done just before they are crispy and still green with a little brown on the edges. They will crisp up when cool.
  6. Directions for Dehydrator: Place kale chips on dehydrating trays. Dehydrate at 135° for 6-8 hours (or until crispy).

Serve and eat!

POPCORN WITH SOME PUNCH!

(Serves 2)

KITCHEN UTENSILS

Medium saucepan

One large bowl

One large spoon

WHOLESOME INGREDIENTS

2 Tbsp organic popcorn

2 Tbsp coconut oil

STEPS TO SOMETHING DELICIOUS

Place 2 tbsp of coconut oil in medium sauce pan, turn burner  on medium to high heat, followed by 2 tbsp of organic popcorn. Let pop. It is important not to let the popcorn sit in the pan (it will burn quickly); shake the pan continuously while the popcorn is popping.

Place popped corn in large bowl.  Spray Braggs Amino Acids (for a delicious, salty flavor) on top. Optional: Shake on 2 tbsp nutritional yeast for a cheesy flavor.  Mix with your hands or a large spoon to disperse evenly.  This tastes BETTER than conventional popcorn, I promise!

You can get creative with the spices and herbs you sprinkle on the chips and popcorn. Enjoy the game — and enjoy your super snacks.
