25 Aug Super Simple Sweet Steel Cut Oat Cookies
If you have a sweet tooth, then this recipe is perfect. Not only is is satisfactorily sweet, it will NOT leave you in sugar coma afterwards or trigger sugar cravings! With the organic steel-cut oats (the least processed type of oats you can use), this snack will stick with you for a long time. Some people have even used them as an on-the-go breakfast or lunch that can be made ahead of time. These are a great snack to keep in the anytime foods drawer you can have for kids to grab healthy snacks after school.
- Medium bowl
- Large spoon or potato masher
- Cookie sheet
- Measuring spoons
- Measuring cups
(Note: Use all organic, fresh ingredients if possible)
Gluten-Free (use certified GF oats), Dairy-Free, Soy-Free, Vegan, Vegetarian
Makes 10-12 cookies
1 cup steel-cut oats
2 VERY ripe bananas
½ cup chopped almonds
1 tsp cinnamon
1/2 tsp vanilla
1/8 tsp sea salt
1/4 cup cranberries
1 tbsp freshly ground flax seed
Optional: 1-2 tbsp coconut
1-2 tbsp sliced or chopped almonds
STEPS TO SOMETHING DELICIOUS
Preheat oven to 375°. Put bananas, oats, and almonds in mixing bowl. Start mashing together. Once the batter is completely mashed and combined, add the cinnamon, vanilla, sea salt, and cranberries. Feel free to taste the batter, if you want to add more cinnamon or vanilla, go for it!
Grease baking sheet with coconut oil. Scoop out about 1 tbsp of the mixture into a ball shape. If making larger balls, the mixture will make 10 cookies, smaller cookies will yield about 12 cookies. Bake for 10 minutes. Pull cookies out of the oven and flatten with a spoon into a cookie shape. Bake another 5 minutes. Take out and sprinkle tops with ground flax seed, almonds, and if desired coconut flakes. Allow to cool. Then dig in and enjoy!
Note: If you don’t want to make all of the mixture, you can refrigerate the mixture and make the next day.
