The Fastest, Healthiest Vegan Snacks Ever

There’s a reason time is the ultimate commodity – there is never, ever enough of it! So while I love creating memories and beautiful dishes in the kitchen, there’s not always time. And when you’re starving, if healthy food can’t happen fast, you’ll be tempted to grab other options, which, let’s face it, are never usually good!  There’s a lot of reasons to have some go-to snacks! These two fast, healthy snacks take minutes to make and keep you full until you can eat a meal. Enjoy!

Tomatoes and Avo Snackers

 

KITCHEN UTENSILS

 

WHOLESOME INGREDIENTS

(Note: Use all organic, fresh ingredients if possible)

Makes 1 serving

1 large tomato

1/2 avocado

2 Lundberg Organic Thin Stackers Red Rice and Quinoa Rice Cakes

Himalayan Sea Salt (to taste)

Black Pepper (to taste)

Garlic powder (to taste)

STEPS TO SOMETHING DELICIOUS

Wash tomato, avocado, and basil leaves. Slice tomato. Cut avocado and remove pit. Slice into wedges and remove from outer shell. Grab two organic rice cakes. Top with tomato and avocado, in the order of your choice. Sprinkle with sea salt and pepper and garlic salt . Rip up fresh basil on the top or use dried basil. That’s it! Enjoy!

Almond Butter Apple Rings

WHOLESOME INGREDIENTS

(Note: Use all organic, fresh ingredients if possible)

Makes 1 serving

1 medium apple

2 tbsp raw almond butter

Optional Toppings of choice (see suggestions below)

 

STEPS TO SOMETHING DELICIOUS

Core the apple using an apple corer or a knife. Slice apple length-wise into four apple ring slices. (Fun shape, right?) Cover with almond butter and add your favorite toppings. Get creative – these pair well with a lot of healthy options.

Topping suggestions:

Dried cranberries or goji berries

Crushed nuts

Unsweetened shredded coconut

Cinnamon

Powdered ginger

Cacao nibs

The options are endless, have fun with it!
